🍌🌰 Walnut Banana Cream Cake

- 2 cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ¾ cup sugar
- ½ cup brown sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mashed ripe bananas (about 2–3 bananas)
- ½ cup milk or buttermilk
- 1 cup chopped walnuts (toasted for best flavor)

- 2 cups heavy whipping cream (cold)
- ¼–½ cup powdered sugar (to taste)
- 1 tsp vanilla extract

👨🍳 Instructions
1. Prep oven
- Preheat to 175°C (350°F)
- Grease and line two 8-inch cake pans
2. Mix dry ingredients
- Whisk flour, baking powder, baking soda, salt, and cinnamon
3. Make batter
- Cream butter, sugar, and brown sugar until fluffy
- Add eggs one at a time, then vanilla
- Mix in mashed bananas
- Alternate adding dry ingredients and milk until smooth
- Fold in walnuts
4. Bake
- Divide batter between pans
- Bake 25–30 minutes or until a toothpick comes out clean
- Cool completely
5. Make cream filling
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form
- (Optional) Beat in cream cheese for a firmer frosting
6. Assemble cake
- Place first cake layer on plate
- Spread whipped cream evenly
- Add second layer and frost top and sides
7. Decorate
