Creamy Herb Chicken Skillet with Peppers, Rice & Garlic Bread

🍗 Chicken skillet
- 500 g (1 lb) chicken breast or thighs, sliced
- 2 tbsp olive oil or butter
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3–4 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & black pepper, to taste
🥣 Creamy herb sauce
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Dijon mustard (optional)
- 1 tsp dried thyme or mixed herbs
- 1 tbsp butter
🍚 Rice
- 2 cups cooked rice (jasmine or basmati)

- 4 slices bread or baguette
- 2 tbsp butter, softened
- 2 garlic cloves, minced
- 1 tbsp parsley, chopped
- Pinch of salt
👨‍🍳 Instructions
1. Cook the rice
- Prepare rice and keep warm
2. Sear the chicken
- Heat oil/butter in a large skillet
- Season chicken with salt, pepper, paprika, and Italian seasoning
- Cook 4–6 minutes until golden and cooked through
- Remove and set aside
3. Sauté vegetables
- In same pan, add onion and peppers
- Cook 4–5 minutes until slightly softened
- Add garlic and cook 30 seconds
4. Make creamy sauce
- Add butter, chicken broth, and cream
- Stir in thyme, Dijon mustard, and Parmesan
- Simmer 3–5 minutes until slightly thickened
5. Combine
- Return chicken to skillet
- Toss in sauce and simmer 2–3 minutes
6. Make garlic bread
- Mix butter, garlic, parsley, and salt
- Spread on bread slices
- Toast in pan or oven at 200°C (400°F) for 6–8 minutes until golden
7. Serve
- Spoon creamy chicken and peppers over rice
- Serve with warm garlic bread
