Chicken Stir-Fry Rice Box with Greens
A balanced, takeout-style rice box loaded with juicy chicken, colorful stir-fried vegetables, and fresh greens—quick, healthy, and full of flavor.
🛒 Ingredients
🍗 Chicken
- 2 cups chicken breast or thigh, thinly sliced
- 1 tbsp soy sauce
- 1 tsp cornstarch
- ½ tsp black pepper
- 1 tbsp oil (for cooking)
🥦 Stir-fry vegetables & greens
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup spinach or mixed greens
- 2–3 green onions, chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated (optional)
🍚 Rice box base
- 2 cups cooked jasmine or basmati rice
🍯 Stir-fry sauce
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional but recommended)
- 1 tbsp honey or brown sugar
- 1 tsp sesame oil
- 2 tbsp water
- 1 tsp cornstarch (for light thickening)
👨🍳 Instructions
1. Prep chicken
- Toss chicken with soy sauce, cornstarch, and pepper
- Let sit 10 minutes
2. Cook chicken
- Heat oil in a pan or wok over medium-high heat
- Stir-fry chicken until golden and cooked through
- Remove and set aside
3. Stir-fry vegetables
- In the same pan, add garlic and ginger
- Add broccoli, carrots, and bell pepper
- Stir-fry 3–4 minutes until slightly tender but crisp
- Add spinach at the end until just wilted
4. Make sauce
- Mix soy sauce, oyster sauce, honey, sesame oil, water, and cornstarch
5. Combine
- Return chicken to pan
- Pour sauce over everything
- Toss until coated and slightly glossy
6. Assemble rice box
- Add cooked rice to a bowl or container
- Top with chicken stir-fry
- Sprinkle green onions on top
