🛒 Ingredients
🍗 Chicken & marinade
- 1 whole chicken (or 4–6 pieces, bone-in preferred)
- 4–5 garlic cloves
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp vinegar
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp black pepper
- 1–2 tsp chili powder (adjust to heat preference)
- 1 tsp salt
🌿 Optional flavor boost
- 1 tbsp mayonnaise (helps crisp skin & adds richness)
🥣 Green sauce (classic Peruvian-style dip)
- ½ cup mayonnaise
- ¼ cup fresh cilantro
- 1 jalapeño (or green chili)
- 1 garlic clove
- 1 tbsp lime juice
- Salt to taste
- 1–2 tbsp olive oil or water (to thin if needed)
👨🍳 Instructions
1. Make marinade
- Blend garlic, soy sauce, lime juice, vinegar, olive oil, and spices into a paste
- Coat chicken thoroughly (under skin if possible for extra flavor)
- Marinate at least 4 hours, ideally overnight
2. Prep for roasting
- Preheat oven to 200°C (400°F)
- Place chicken on a rack over a tray
- Let excess marinade drip slightly for better crisping
3. Roast
- Roast for 50–70 minutes depending on size
- Baste once or twice with pan juices
- Cook until skin is golden and internal temp reaches 75°C (165°F)
4. Make green sauce
- Blend all sauce ingredients until smooth and creamy
- Adjust thickness with water or oil
5. Rest & serve
- Rest chicken 10 minutes before slicing
- Serve with green sauce on the side
