Crispy Garlic Fish Strips
Ingredients
- 500 g firm white fish (tilapia, cod, basa, or similar), cut into strips
- 1 cup all-purpose flour
- 1/2 cup cornflour (cornstarch)
- 1 tsp baking powder
- 1 tsp garlic powder (or 4–5 fresh garlic cloves, minced)
- 1 tsp paprika or red chili powder
- 1/2 tsp black pepper
- Salt to taste
- 1 egg
- 3/4 cup cold water (adjust as needed)
- Oil for deep frying
Instructions
- Prep the fish
Pat fish dry. Lightly season with salt and pepper. Set aside. - Make the batter
In a bowl, mix flour, cornflour, baking powder, garlic, paprika, salt, and pepper.
Add egg and cold water gradually until you get a thick, smooth batter (coating consistency). - Heat the oil
Heat oil to medium-high (around 170–180°C). If you don’t have a thermometer, a drop of batter should rise slowly with bubbles. - Coat and fry
Dip fish strips into batter, let excess drip off, and gently place into oil.
Fry in batches until golden and crispy (about 4–6 minutes). - Drain
Remove and place on paper towels to absorb excess oil.
🍋 Zesty Lime Dip
Ingredients
- 1/2 cup mayonnaise
- 2 tbsp yogurt (optional for lighter texture)
- 1–2 tbsp fresh lime juice
- 1 tsp lime zest
- 1 small garlic clove (finely grated)
- 1/2 tsp honey or sugar
- Salt and black pepper to taste
- Optional: pinch of chili flakes or chopped coriander
Instructions
- Mix all ingredients in a bowl until smooth.
- Taste and adjust lime, salt, or sweetness.
- Chill for 10–15 minutes for best flavor.
