Grilled Chicken Quarters with Crispy Wedges & Tropical Avocado-Mango Salad
Ingredients (serves 2–3)
Grilled Chicken Quarters
- 2 chicken leg quarters (or thighs + drumsticks)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp chili powder (optional)
- 1 tbsp lemon juice
- Optional: 1 tsp honey (for slight caramelization)
🥔 Crispy Potato Wedges
- 3 large potatoes (cut into wedges)
- 2–3 tbsp oil
- 1 tsp salt
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp dried oregano or mixed herbs
🥭 Tropical Avocado-Mango Salad
- 1 ripe mango (cubed)
- 1 ripe avocado (cubed)
- ½ red onion (thin slices)
- 1 small cucumber (diced)
- Handful of coriander (cilantro)
Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon or lime juice
- 1 tsp honey (optional)
- Salt & black pepper to taste
👨🍳 Instructions
1. Marinate and grill chicken
- Mix olive oil, spices, salt, pepper, lemon juice (and honey if using).
- Coat chicken well and let it sit 20–30 minutes (or longer for deeper flavor).
- Grill on medium heat for 20–30 minutes, turning occasionally.
- Cook until skin is charred and inside is fully cooked and juicy.
- Optional: brush with extra marinade while grilling for more flavor.
2. Make crispy wedges
- Preheat oven to 200°C (400°F).
- Soak potato wedges in water for 15–20 minutes (optional but helps crispiness).
- Pat dry, then toss with oil and spices.
- Spread on a baking tray in a single layer.
- Bake for 35–45 minutes, flipping halfway, until golden and crisp.
3. Prepare tropical salad
- Combine mango, avocado, onion, cucumber, and coriander in a bowl.
- Whisk dressing ingredients separately.
- Pour over salad just before serving and gently toss.

- Add crispy wedges on the side.
