🧾 Ingredients
🧀 Crust
- 1½ cups crushed graham crackers (or digestive biscuits)
- 6 tbsp melted butter
- 2 tbsp sugar (optional)
🍋 Cheesecake filling
- 450g cream cheese (softened)
- ¾ cup sugar
- 2–3 eggs (for baked version)
- 1 tsp vanilla extract
- Zest of 1–2 lemons
- 2–3 tbsp lemon juice
- ½ cup sour cream (optional, for creaminess)
🍑 Topping
- 2–3 nectarines (sliced)
- 2 tbsp honey or sugar (optional glaze)
- 1 tsp lemon juice
👨🍳 Instructions
1. Make crust
- Mix crushed biscuits, melted butter, sugar
- Press into a springform pan
- Chill (or bake at 175°C for 8–10 min for a firmer base)
2. Prepare filling
- Beat cream cheese and sugar until smooth
- Add eggs one at a time (skip for no-bake version)
- Mix in vanilla, lemon zest, lemon juice, and sour cream
- Pour over crust
3. Bake (for baked version)
- Bake at 160°C (320°F) for 45–55 minutes
- Center should be slightly wobbly
- Cool completely, then chill 4+ hours
4. Add nectarine topping
- Slice nectarines
- Lightly toss with lemon juice and honey
- Arrange on chilled cheesecake
