- 4 cloves garlic, minced
- Salt & black pepper
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- 1 tsp dried thyme or rosemary
- Fresh parsley (optional, for garnish)
Instructions:
1. Cook the potatoes first
- Heat oil in a large skillet over medium heat.
- Add diced potatoes, season with salt, pepper, and paprika.
- Cook 12–15 minutes, stirring occasionally, until golden and fork-tender.
- Remove and set aside.
2. Sear the steak
- Turn heat to high.
- Add a bit more oil if needed.
- Add steak cubes in a single layer (don’t overcrowd).
- Sear 2–3 minutes per side until nicely browned.
- Season with salt, pepper, and herbs.
3. Garlic butter magic
- Lower heat to medium.
- Add butter and garlic to the pan.
- Stir and let the butter foam and coat the steak.
4. Bring it together
- Return potatoes to the pan.
- Toss everything in the garlic butter for 1–2 minutes.
5. Serve
- Finish with parsley and a pinch of chili flakes if you like heat.
Tips that actually matter:
- Dry the steak well before cooking—this is key for a good sear
- Small potato cubes cook faster and crisp better
- Don’t overcook the steak—pull it slightly early; it keeps cooking in the butter
- A squeeze of lemon at the end cuts through the richness nicely
