🥬🥟 German Cabbage and Dumplings (Kraut & Knödel Style)
This is a hearty, old-fashioned comfort dish: tender cabbage cooked with onions and butter, paired with soft dumplings that soak up all the savory flavor.
🛒 Ingredients:
🥬 Cabbage:
- 1 small green cabbage, shredded
- 1 large onion, sliced
- 3 tbsp butter (or bacon fat for traditional flavor)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp caraway seeds (optional but very traditional)
- ½ cup broth (vegetable or chicken)
- 1 tbsp apple cider vinegar (optional, for tang)
🥟 Dumplings:
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- ¾ cup milk (adjust as needed)
- 2 tbsp melted butter
👩🍳 Instructions:
1. Cook the cabbage
Melt butter in a large pan over medium heat.
Add onions and cook until soft and slightly golden.
Add shredded cabbage, salt, pepper, and caraway seeds. Stir well.
Pour in broth and cover.
Simmer for 20–30 minutes, stirring occasionally, until cabbage is tender and slightly caramelized.
Stir in vinegar at the end if using.
2. Make dumpling batter
In a bowl, mix flour, baking powder, and salt.
Add eggs, milk, and melted butter. Stir until a thick, sticky batter forms (like thick pancake batter).
3. Cook dumplings
Bring a pot of salted water to a gentle simmer.
Drop spoonfuls of batter into the water.
Cook for 8–10 minutes, until dumplings float and are cooked through. Remove with a slotted spoon.
4. Combine or serve
You can either:
- Serve dumplings alongside cabbage, or
- Toss dumplings into the cabbage pan to soak up flavor
