πβ Apple Cinnamon Coffee Cake
A soft, buttery cake packed with cinnamon-spiced apples and topped with a crumbly streusel. Perfect for breakfast, brunch, or a cozy dessert with coffee.
π Ingredients:

- 2 cups all-purpose flour
- 1Β½ tsp baking powder
- Β½ tsp baking soda
- Β½ tsp salt
- 1 tsp cinnamon
- Β½ cup (1 stick) butter, softened

- 2 eggs
- 1 tsp vanilla extract
- ΒΎ cup sour cream or plain yogurt
- 2 medium apples, peeled and diced

- 1 apple, finely chopped
- 2 tbsp brown sugar
- 1 tsp cinnamon

- Β½ cup flour
- β cup brown sugar
- 1 tsp cinnamon
- ΒΌ cup cold butter, cubed
π©βπ³ Instructions:
1. Preheat oven
Set to 350Β°F (175Β°C). Grease a baking pan (8Γ8 or 9Γ9 works well).
2. Make streusel
Mix flour, brown sugar, and cinnamon.
Cut in cold butter until crumbly. Set aside.
3. Prepare cake batter
In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
In another bowl, cream butter and sugar until fluffy.
Add eggs and vanilla, then mix in sour cream.
Combine wet and dry ingredients until just mixed.
Fold in diced apples.
4. Add apple filling layer
Mix chopped apple with brown sugar and cinnamon.
5. Assemble cake
Pour half the batter into pan.
Add apple filling layer.
Top with remaining batter.
Sprinkle streusel evenly on top.
6. Bake
Bake for 40β50 minutes, until:
- Top is golden and crumbly
- Toothpick comes out clean
7. Cool
Let cool at least 15 minutes before slicing.
