🍤 Coconut curry shrimp
- 500 g (1 lb) shrimp, peeled & deveined
- 1 tbsp oil (coconut or vegetable)
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp red curry paste
- 1 can (400 ml) coconut milk
- 1 tbsp fish sauce (or soy sauce)
- 1 tbsp brown sugar
- 1 tsp lime juice
- ½ tsp chili flakes (optional)
- Salt & pepper, to taste
- Fresh cilantro, for garnish
🍍 Pineapple rice
- 2 cups cooked jasmine rice (preferably day-old)
- 1 cup diced pineapple (fresh or canned, drained)
- 2 tbsp oil
- 2 green onions, sliced
- 1 garlic clove, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil (optional)
- Salt & pepper, to taste
👨‍🍳 Instructions
1. Cook the pineapple rice
- Heat oil in a pan over medium heat.
- Add garlic and green onions, sauté briefly.
- Add rice and stir-fry 2–3 minutes.
- Stir in pineapple, soy sauce, sesame oil, salt, and pepper.
- Cook another 2–3 minutes, then set aside.
2. Make the curry
- Heat oil in a skillet over medium heat.
- Add garlic and ginger; sauté 30 seconds.
- Stir in curry paste and cook 1 minute to release flavor.
3. Build the sauce
- Pour in coconut milk, stir until smooth.
- Add fish sauce, brown sugar, and chili flakes.
- Simmer 3–5 minutes until slightly thickened.
4. Cook the shrimp
- Add shrimp to the sauce.
- Cook 3–5 minutes until pink and cooked through (don’t overcook).
- Finish with lime juice.
5. Serve
- Spoon pineapple rice onto plates.
- Top with coconut curry shrimp.
- Garnish with fresh cilantro.
