🧁 Crispy Potato Muffins
🥔 Ingredients:
- 3 cups potatoes (boiled & mashed or finely grated raw)
- 1 cup shredded cheddar cheese
- 2 eggs
- 2 tbsp melted butter or oil
- ¼ cup milk
- 2 tbsp chopped green onions
- ½ tsp salt
- ½ tsp black pepper
- Optional: garlic powder, paprika, or herbs
🔪 Instructions:
- Preheat oven to 200°C (400°F). Grease a muffin tin well.
- Mix all ingredients in a bowl until combined.
- Spoon mixture into muffin cups, pressing down slightly.
- Bake 25–30 minutes until golden and crispy on top.
- Let cool for 5 minutes, then remove carefully.
🔥 Extra Crisp Tip:
Brush the tops with a little butter and broil for 2–3 minutes at the end.
🧀 Variations:
- Add cooked minced meat or chicken
- Mix in sautéed onions or peppers
- Swap cheddar for mozzarella for a stretchier texture
