Garlic Herb Roast Chicken with Honey-Glazed Carrots & Baby Potatoes

🛒 Ingredients
🍗 Roast chicken
- 1 whole chicken (or 4–6 pieces, bone-in)
- 3 tbsp olive oil or butter (softened)
- 5 garlic cloves, minced
- 1 tbsp fresh rosemary or thyme (or 1 tsp dried)
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp lemon juice 🍋
🥔 Baby potatoes
- 500–700 g baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper, to taste
- 1 tsp dried herbs (oregano or thyme)
🥕 Honey-glazed carrots
- 4–5 carrots, peeled and sliced
- 1½ tbsp butter
- 1–2 tbsp honey 🍯
- Salt & pepper, to taste
- Optional: pinch of cinnamon or thyme
👨🍳 Instructions
1. Prep chicken
- Preheat oven to 200°C (400°F)
- Mix olive oil/butter, garlic, herbs, paprika, salt, pepper, and lemon juice
- Rub mixture all over chicken (and under skin if possible for extra flavor)
2. Roast chicken + potatoes
- Place chicken on roasting tray
- Toss baby potatoes with olive oil, garlic powder, salt, pepper, and herbs
- Arrange potatoes around chicken
- Roast for 50–70 minutes, basting once or twice
- Chicken is done when juices run clear (or internal temp 75°C / 165°F)
3. Make honey-glazed carrots
- While chicken roasts, melt butter in a pan
- Add carrots and sauté 3–4 minutes
- Add honey, salt, pepper, and optional cinnamon
- Cook until carrots are tender and glossy (8–10 minutes total)
4. Crisp everything (optional)
- Broil chicken and potatoes for 2–3 minutes at the end for extra golden edges
5. Rest & serve
- Let chicken rest 10 minutes before slicing
- Serve with potatoes and glazed carrots
