Loaded Country-Style Potatoes

- 4–5 medium potatoes (russet or Yukon gold), diced into chunks
- 2–3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika (smoked if you have it)
- ½ tsp onion powder
- Salt & black pepper (to taste)
For loading:
- 1 cup shredded cheddar cheese
- 4–5 strips cooked beef or turkey bacon (crumbled)
- 2–3 green onions (chopped)
- ½ cup sour cream (or Greek yogurt)
- Optional: jalapeños, chili flakes, or sautéed mushrooms
👩‍🍳 Instructions:
- Preheat oven
Set to 200°C (400°F). Line a baking tray. - Season the potatoes
Toss diced potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper. - Roast until crispy
Spread in a single layer and bake for 30–40 minutes, flipping halfway, until golden and crispy. - Add toppings
Remove from oven, sprinkle cheese and bacon over the hot potatoes. - Melt & finish
Return to oven for 5 minutes until cheese melts. - Serve loaded
Top with sour cream, green onions, and any extras you like.
