- 2–3 medium zucchinis, sliced
- 3–4 ripe tomatoes, sliced (or 1 can diced tomatoes, drained)
- 2–3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil (or Italian seasoning)
- Salt & black pepper, to taste
- ½ tsp chili flakes (optional)
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella (optional, for melty topping)
- Fresh parsley or basil for garnish
👨🍳 Instructions
1. Prep oven
- Preheat to 190°C (375°F)
- Lightly grease a baking dish
2. Layer vegetables
- Arrange zucchini and tomato slices in overlapping layers
- Sprinkle garlic evenly between layers
3. Season
- Drizzle olive oil over everything
- Add oregano, basil, salt, pepper, and chili flakes
4. Add cheese
- Sprinkle Parmesan over the top

5. Bake
