🐑🍲 Mutton Handi (Rich Pakistani-Style Curry)
Mutton Handi is a slow-cooked, creamy, and deeply spiced curry made in a thick base of yogurt, onions, tomatoes, and aromatic spices. It gets its name from the traditional “handi” (clay pot), which helps intensify flavor—but a heavy pot or Dutch oven works perfectly too.
🛒 Ingredients:
🐑 Mutton:
- 1 kg mutton (bone-in for best flavor)
- 3 tbsp oil or ghee
🧅 Base:
- 2 large onions, finely sliced or blended
- 2 medium tomatoes, chopped or pureed
- 1 cup plain yogurt (whisked)
- 2 tbsp ginger-garlic paste
🌶️ Spices:
- 1½ tsp salt (adjust to taste)
- 1 tsp red chili powder (adjust to heat level)
- 1 tsp turmeric powder
- 1½ tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
🍃 Optional:
- 2–3 green chilies (sliced)
- Fresh coriander (for garnish)
- 2–3 tbsp cream or butter (for richer finish)
👩🍳 Instructions:
1. Sauté onions
Heat oil or ghee in a heavy pot.
Cook onions until golden brown—this builds the base flavor.
2. Add aromatics
Add ginger-garlic paste and sauté for 1–2 minutes until fragrant.
3. Cook tomatoes & spices
Add tomatoes, salt, turmeric, chili powder, coriander, and cumin.
Cook until oil starts separating from the masala (about 8–10 minutes).
4. Add mutton
Add mutton pieces and sear well, coating them in the spice mixture.
5. Slow cook
Add a splash of water (about ½ cup).
Cover and cook on low heat for 45–90 minutes, stirring occasionally, until mutton becomes tender.
(Add more water if needed during cooking.)
6. Add yogurt
Lower heat and stir in whisked yogurt slowly so it doesn’t curdle.
Simmer for 10–15 minutes until gravy thickens and becomes creamy.
7. Finish
Add garam masala, green chilies, and cream or butter if using.
Cook uncovered for a few minutes until oil slightly separates.
