🥐🧀🥩 Reuben Crescent Bake
A warm, cheesy casserole inspired by the classic Reuben sandwich—layered with corned beef, Swiss cheese, sauerkraut, and creamy dressing, all baked in flaky crescent dough until golden.
🛒 Ingredients:
- 2 cans refrigerated crescent roll dough
- 1 lb corned beef, sliced or chopped
- 8–10 slices Swiss cheese
- 1–1½ cups sauerkraut, drained well
- ½ cup Thousand Island dressing (plus extra for serving)
- 1 egg (beaten, for egg wash)
- Optional: caraway seeds for topping
👩🍳 Instructions:
1. Prep the sauerkraut
Drain sauerkraut very well and squeeze out excess liquid.
(This keeps the bake from getting soggy.)
2. Form the base
Preheat oven to 375°F (190°C).
Unroll one can of crescent dough and press seams together in a greased baking dish to form a solid base layer.
3. Layer fillings
Spread half the Thousand Island dressing over dough.
Add:
- Corned beef
- Swiss cheese
- Sauerkraut
Drizzle remaining dressing on top.
4. Top layer
Unroll second crescent dough sheet and place over filling (or lay triangles and pinch seams together).
Seal edges.
Brush with beaten egg and sprinkle caraway seeds if using.
5. Bake
Bake for 20–25 minutes, until:
- Golden brown
- Dough is fully cooked
- Cheese is melted and bubbly
6. Rest & slice
Let cool 5–10 minutes before slicing into squares.
