🥩 BBQ Glazed Meatloaf
Ingredients:
- 1 kg ground beef
- 1 cup breadcrumbs
- 1 egg
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- ½ cup milk
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt, ½ tsp black pepper
BBQ Glaze:
- ½ cup barbecue sauce
- 2 tbsp ketchup
- 1 tbsp brown sugar
Instructions:
- Preheat oven to 180°C (350°F).
- Mix all meatloaf ingredients until just combined.
- Shape into a loaf in a baking dish.
- Bake 40 minutes.
- Mix glaze, spread on top, bake another 15–20 minutes.
- Rest 10 minutes before slicing.
🥔 Creamy Mashed Potatoes with Gravy
Ingredients:
- 1 kg potatoes, peeled & chopped
- 4 tbsp butter
- ½ cup milk or cream
- Salt to taste
Instructions:
- Boil potatoes until fork-tender.
- Drain and mash with butter and milk.
- Season well and keep warm.
Quick Gravy:
- 2 tbsp butter
- 2 tbsp flour
- 2 cups beef broth
- Melt butter, stir in flour (cook 1–2 min).
- Slowly whisk in broth until smooth.
- Simmer until thick, add salt/pepper.
Top potatoes with gravy + chopped green onions.
🥦 Broccoli & Cheese Casserole
Ingredients:
- 3 cups broccoli florets
- 1 cup shredded cheddar cheese
- ½ cup cream or milk
- 2 tbsp butter
- 2 tbsp flour
- Salt & pepper
Instructions:
- Steam broccoli until just tender.
- Make cheese sauce: melt butter, add flour, whisk in milk, then cheese.
- Combine with broccoli, place in baking dish.
- Bake at 180°C for 20 minutes until bubbly.
🌽 Buttered Corn
Ingredients:
- 2 cups corn kernels
- 2 tbsp butter
- Salt
Instructions:
- Heat corn with butter in a pan.
- Season lightly and serve warm.
