Spicy Caribbean Coconut Chicken Stew
A rich, island-style chicken stew simmered in creamy coconut milk with warm spices, peppers, and herbs—sweet, spicy, and deeply comforting.
🛒 Ingredients
🍗 Chicken
- 1 kg chicken thighs or drumsticks (bone-in for best flavor)
- 1 tbsp lime juice
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp allspice (key Caribbean flavor)
🌶️ Stew base
- 2 tbsp oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 tbsp ginger, grated
- 1–2 Scotch bonnet peppers (or any hot chili, adjust to taste) 🌶️

- 2 tomatoes, chopped (or 1 cup canned tomatoes)
🥥 Coconut broth
- 1 can (400 ml) coconut milk
- 1 cup chicken broth or water
- 1 tsp thyme (fresh or dried)
- 1 tsp curry powder (optional but adds depth)
- 1 tsp brown sugar
- Salt & pepper, to taste
🌿 Finish
- Fresh parsley or cilantro
- Lime wedges
👨🍳 Instructions
1. Season chicken
- Rub chicken with lime juice, salt, pepper, paprika, and allspice
- Let sit 15–30 minutes (or longer for deeper flavor)
2. Brown chicken
- Heat oil in a large pot
- Sear chicken until golden on all sides
- Remove and set aside
3. Build flavor base
- In same pot, sauté onion, garlic, ginger, and chili
- Cook 2–3 minutes until fragrant
- Add bell pepper and tomatoes
- Cook until softened
4. Add coconut broth
- Stir in coconut milk, broth, thyme, curry powder, and brown sugar
- Mix well
5. Simmer stew
- Return chicken to pot
- Cover and simmer 30–40 minutes until chicken is tender and sauce thickens
6. Finish
- Adjust salt, spice, and sweetness
- Garnish with fresh herbs and lime juice
