🛒 Ingredients
- 1 sheet puff pastry (thawed if frozen)
- 2 cups fresh spinach (or 1 cup frozen, well-drained)
- 2 tbsp olive oil or butter
- 2–3 garlic cloves, minced
- ½ cup cream cheese (softened)
- 1 cup shredded mozzarella (or cheddar blend)
- ¼ cup grated Parmesan cheese
- 1 egg (for egg wash)
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp nutmeg (optional, classic spinach flavor)
👨🍳 Instructions
1. Prep oven
- Preheat to 200°C (400°F)
- Line a baking tray with parchment paper
2. Cook spinach filling
- Heat oil in a pan over medium heat
- Add garlic and sauté 30 seconds
- Add spinach and cook until wilted (or heated through if frozen)
- Remove excess moisture (important for crisp pastry)
- Mix in cream cheese, mozzarella, Parmesan, salt, pepper, and nutmeg
3. Prepare pastry
- Roll out puff pastry slightly
- Cut into equal squares
4. Fill & fold
- Spoon spinach mixture onto each square
- Fold into triangles or leave open-faced for a tart-style square
- Press edges lightly with a fork if sealed
5. Egg wash
- Beat egg and brush lightly over pastry tops
6. Bake
- Bake 15–20 minutes until puffed and golden brown
