Spinach Mushroom Feta Crustless Quiche
đź§ľ Ingredients:
- 6 large eggs
- 1 cup fresh spinach (chopped, or frozen & drained)
- 1 cup mushrooms (sliced)
- ½ cup feta cheese (crumbled)
- ½ cup milk or cream
- ÂĽ cup grated Parmesan (optional, for extra flavor)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1–2 tbsp olive oil or butter
- Salt & black pepper (to taste)
- ½ tsp dried oregano or Italian seasoning
👩‍🍳 Instructions:
- Preheat oven
Set to 180°C (350°F). Lightly grease a pie dish or baking pan. - Cook the vegetables
In a pan, heat oil and sauté onion and mushrooms until soft and slightly golden.
Add garlic and spinach, cooking until wilted. Remove from heat and let cool slightly. - Prepare the egg mixture
In a bowl, whisk eggs, milk/cream, salt, pepper, and oregano. - Assemble
Spread the cooked veggie mixture evenly in the baking dish.
Sprinkle feta (and Parmesan if using) on top.
Pour the egg mixture over everything. - Bake
Bake for 30–35 minutes, or until the center is set and the top is lightly golden. - Cool & serve
Let it rest for 10 minutes before slicing—it helps it firm up.

- Add a pinch of chili flakes for heat.
- You can mix in cooked chicken or turkey for extra protein.
- For a fluffier texture, whisk the eggs really well or add a tablespoon of cream cheese.
