Teriyaki Chicken and Shrimp Fried Rice

🛒 Ingredients
🍗 Protein
- 1 cup cooked chicken, diced or shredded
- 1 cup shrimp, peeled and deveined
- 1 tbsp oil (vegetable or sesame)
- Salt & pepper, to taste
🍚 Fried rice
- 3 cups cooked rice (preferably cold/day-old)
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 2–3 green onions, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, minced (optional)
🍯 Teriyaki sauce
- ¼ cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or lemon juice
- 1 tsp sesame oil (optional)
- 1 tsp cornstarch + 2 tbsp water (for thickening)
👨🍳 Instructions
1. Make teriyaki sauce
- In a small pan, combine soy sauce, honey, vinegar, and sesame oil
- Bring to a simmer
- Stir in cornstarch slurry and cook until slightly thickened
- Set aside
2. Cook shrimp
- Heat oil in a large pan or wok
- Cook shrimp 1–2 minutes per side until pink
- Remove and set aside
3. Cook eggs
- In same pan, scramble eggs until just set
- Remove or push to side
4. Stir-fry aromatics
- Add garlic and ginger
- Sauté 30 seconds until fragrant
5. Add rice & veggies
- Add cold rice and break apart
- Stir-fry 3–4 minutes
- Add mixed vegetables
6. Combine everything
- Add chicken, shrimp, and scrambled eggs back in
- Pour teriyaki sauce over rice
- Toss until evenly coated and heated through
7. Finish
- Add green onions
- Drizzle a little extra sesame oil if desired

- Top with sesame seeds
- Serve with extra teriyaki sauce on the side
